Our homage to the great wines of Chateauneuf-du-Papes is a constantly changing blend of primarily Rhone varietals that satisfies the most discriminating of palates. Primary fermentation takes place over three weeks in open top fermenters to macerate all these luscious flavors properly. The choir sings of dark red, black and blue fruits, accented by white and green pepper, mocha earth and leather notes, ending with a finish that lasts about three days. Pair this with your favorite grilled meats, structured pasta or stinky cheeses.
